Stir fried spring greens

Can you believe it? I’ve made it through 30 or so posts on veganism without resorting to a tofu recipe! Alas, I could put it off no longer.

Hopefully, even if you’re a tofu sceptic, you’ll be pleasantly surprised by this tasty recipe.

This takes about 5 minutes to cook so is ideal for a light lunch or quick snack but it does require a bit of advance preparation. Serves one.

Preparing the tofu.

Drain a packet of firm tofu. As per the instructions on the packet, place the tofu between two sheets of kitchen roll and two chopping boards then place a heavy pan on top. Leave this for a couple of hours to remove as much of the moisture as possible.

(Top tip; don’t do what I did the first time I bought tofu and press too hard on it when you’re trying to weigh it down – it will turn into a pile of mush! Gently does it.)

On with the recipe.

1/4 packet of tofu, prepared as above

2 large handfuls of spring greens

2 cloves of minced garlic

tamari soy sauce

sweet chilli sauce

sesame seeds

1 dessert spoon vegetable oil

Heat the oil in a frying pan or wok. Add the tofu and fry until browned on all sides. Add the garlic and fry for about 1 minute (take care not to over cook the garlic). Add the spring greens and cook until wilted. Pour in a generous splash of soy sauce and sweet chilli sauce and then serve. Sprinkle some sesame seeds over the top and enjoy.

Serve with some rice noodles or rice to make a more substantial meal.
