Puff pastry pizza

I just had to post about tonight’s dinner. It’s not a particularly innovative or complex recipe but it really hit the spot.

1 packet Jus Rol puff pastry

tomato puree

selection of veggies

vegan cheese (I used Cheezly soy free)


Preheat the oven as per the instructions on the pastry packet.

Cut the pastry into quarters and roll each quarter out flat. Spread with tomato puree and top with vegetables. You could use raw veggies, or do what I did and roast the vegetables first in olive oil for around 20 minutes. I used courgettes, onion and red pepper. Sprinkle some slices of vegan cheese over the top and bake in the oven for 20 minutes. We had our pizzas with some potato wedges and chilli sauce.

Sophisticated? Not exactly. I now have a very happy tummy though!
