I think I should change the name of my blog to ‘The Banana Blog’ – so many of my meals seem to incorporate the wonder fruit. I just can’t help myself, I’m addicted to bananas! No, not a euphemism.
In my defence, bananas are wonderfully versatile, healthy and delicious. They are also the perfect food for kids – I’ve yet to meet a child who doesn’t like them and they are so easy just to pop in your bag for a ready made healthy snack when you’re out and about.
Anyway, enough of the eulogising and one with the recipes.
Nutty Banana Wraps
1 vegan tortilla
1 banana, sliced
a handful of chopped nuts
Heat the tortilla wrap according to the instructions on the packet, slice the banana, add the chopped nuts and a good drizzle of maple syrup. Eat it as it is, or you can put it in the microwave for a few seconds to heat it through.
Served alongside a glass of soya milk, these make a fantastic breakfast for kids or for a decadent, but still fairly healthy dessert, you could add either a scoop of vanilla soya ice cream or a big dollop of soya yogurt to the heated wraps.
