A fantastically easy but nutritious meal idea for the baby in your life!
My darling baby and I had a really lazy afternoon today – his big brother was out for the afternoon so we settled down for a nice nap. Fast forward two hours, we’ve only just woken up and it’s nearly time for dinner. No time to cook anything fancy, what to do, what to do…
Mash one ripe banana in a bowl, mix in a good dollop of tahini* and Bob’s your uncle, one nutrient packed dinner for the discerning vegan baby.
Incidentally, banana and tahini somehow make a fabulous sandwich filling for us big boys and girls too!
*tahini is, as far as I’m concerned at least, one of those super-foods that no vegan kitchen should be without. A paste made from ground sesame seeds, it boasts a whole host of vital nutrients: calcium, B vitamins, protein, vitamin E, EFAs (essential fatty acids). And its uses are as plentiful as its health benefits. A key ingredient in hummus, it can also be used in sandwiches in place of butter or peanut butter, used in soups and sauces or salad dressings or just used on its own as a dip for pitta bread or chopped veggies.
